Nutty Broccoli

Ingredients

  • 1 tablespoon butter
  • 1/4 cup chopped walnuts
  • 4 tablespoons olive oil
  • 3 cloves garlic, peeled and minced
  • 1 large head broccoli, cut into florets, stems peeled
  • 1/4 cup chicken broth
  • 3/4 teaspoon salt, or to taste

Directions

  1. In a small saucepan, melt butter over low heat.

  2. Stir in chopped walnuts.

  3. Continue stirring and cook for 2 minutes, or until golden brown.

  4. Set aside.

  5. In a large skillet over medium heat, heat olive oil for 30 seconds.

  6. Add garlic and cook, stirring, for 30 seconds.

  7. Add broccoli and cook for 3 minutes.

  8. Add broth to the skillet, cover and cook for 3 to 4 minutes, until broccoli is tender but still crisp.

  9. Sprinkle with salt.

  10. Toss broccoli with the walnuts.
