Pumpkin Bread

Ingredients

  • 4 cups sugar
  • 1 29oz can or 4 cups pumpkin
  • 3 eggs
  • 1 cup vegetable oil
  • 5 cups flour
  • 1 tbsp baking soda
  • 2 tsp cinnamon
  • 1 tsp ground cloves
  • 1 tsp nutmeg
  • 1 tsp salt
  • 2 cups raisins (and/or currants)
  • 2 cups coarsely chopped walnuts or pecans

Directions

  1. Combine sugar, pumpkin, and eggs in a large bowl

  2. Beat until well-blended

  3. Add oil, beat to combine

  4. Mix dry ingredients (except fruit/nuts)

  5. Thoroughly blend dry mix into pumpkin mix

  6. Stir in raisins and nuts

  7. Fill prepared pans (3 9″×5″ or 4 8″×4″ loaf pans 3/4 full

  8. Bake at 350F for 1 hour 15 minutes (or until a toothpick at the center comes out clean and bread has pulled away slightly from pan edges)
