Grasshopper Pie

*Grandma’s notes: “I find it is difficult to mix xx cream and sauce so I find the best way is to pour sauce into a bowl on top of cream, then pour all back into pan and then again back to bowl, cutting through all the time gently w/wire whip.”
also: “I greased Pyrex pie dish and it stuck badly when serving. Try greasing with Wesson (?) oil.”
“Set pie dish on cloth soaked in H2O from boiling tap, for a few minutes before trying to remove pieces.”

Ingredients

  • Crust:
  • 1.25 cups crushed chocolate cookie wafers (1/2 8.5 oz box of Nabisco wafers)
  • 1/3 cup melted butter
  • Filling:
  • 2/3 cup milk, scalded
  • 25 marhmallows
  • 2 oz green creme de menthe
  • 1 oz white creme de cacao
  • 1/2 pint whipping cream

Directions

  1. Crust:

  2. Combine crushed wafers with butter

  3. Pat into deep 9" pie pan, generously greased

  4. Chill in refrigerator until filled

  5. Pie:

  6. Combine marshmallows and scalded milk in double boiler, stirring often until blended into smooth mixture

  7. Cool to room temperature

  8. Add creme de menthe and cacao

  9. Fold whipped cream into mix and pour into chilled chocolate crust

  10. Freeze for a minimum of 2 hours

  11. If frozen overnight, it should be partially thawed before serving
