Cook time: 40 minutes
Serves 4 people

Ingredients

  • 1-2 T. oil
  • 1.25 c. lentils
  • 3 c. broth
  • 1 t. salt
  • dash of pepper
  • 1.5 c basmati rice
  • 1 c. broth
  • 0.75 c. tomato paste
  • 2 c. tomato juice
  • green pepper
  • celery leaves
  • 2 t. sugar
  • 0.5 t. salt
  • 1 t. cumin
  • cayenne pepper to taste
  • 2 T. oil
  • 3 onions
  • plain yogurt

Directions

  1. Base:

  2. Brown lentils in oil for 5 minutes, stirring often

  3. Add broth (or water), salt, and pepper, bring to boil

  4. Cook uncovered for 10 minutes over medium heat

  5. Add rice and more broth/water

  6. Bring to boil

  7. Reduce heat to low and cook until rice is done, about 20 minutes

  8. Sauce:

  9. Combine sauce ingredients (tomato paste – pepper) and bring to boil

  10. Reduce heat and simmer 20-30 minutes

  11. Onions:

  12. Sautee onions and garlic until browned

  13. Serve with sauce, onions, and yogurt
