Blueberry Custard Pie

This pie is great for diabetics. Also, you can use several different fruits or just serve the custard pie with no topping.

Prep time: 10 minutes
Cook time: 20 minutes
Serves 6 people

Ingredients

  • 1 each pie crust--deep dish
  • 4 each eggs
  • 2 cups milk--2%, whole, or 1%
  • 11 tablespoons Splenda or sugar
  • 3/4 teaspoon salt
  • 1 teaspoon vanilla

Directions

  1. Heat oven to 350 deg.

  2. Cook shell about 5 min. take out of oven and set aside.

  3. Mix milk, sugar, salt, and vanilla. Heat to just scalding temp (150 degrees).

  4. Stir eggs real good while the milk is heating.

  5. Add eggs to mixture, stirring while mixing as not to cook eggs.

  6. Pour into shell and bake at 350 deg. 20 to 25 min., until just starting to set.

  7. The custard will still be very shaky.

  8. Take out and let cool.
