Lemon Chicken and Rice

Serves 4 people

Ingredients

  • 1/2 cup Italian dressing
  • 1 lb boneless skinless chicken breasts, cut into strips
  • 1 cup chicken broth
  • 1 cup small broccoli florets
  • 1 red pepper, cut into strips
  • 1 cup thinly sliced carrots
  • 2 cups Minute Brown Rice, uncooked
  • 1 tsp lemon pepper
  • 2 tbsp grated Parmesan cheese

Directions

  1. Heat dressing in large skillet on menium-high heat. Add chicken; cook and stir 1 minute.

  2. Add broth, broccoli, red pepper and carrots. Bring to a boil.

  3. Stir in rice. Return to boil. Reduce heat to low; cover. Simmer 5 minutes. Remove from heat. Let stand 5 minutes. Stir in lemon pepper; sprinkle with cheese.
