Quinoa Tabouli

Ingredients

  • 2 cups cooked quinoa
  • 1-2 tbsp freshly squeezed lemon juice (to taste)
  • 1 tbsp extra virgin olive oil
  • 1 tsp kosher salt (or to taste)
  • 1 cup fresh chopped parsley and/or mint leaves (more of less to taste)
  • 1 cucumber, chopped (optional)
  • 1 tomato, chopped (optional)
  • freshly ground pepper (to taste)

Directions

  1. Mix quinoa and parsley/mint together

  2. Add rest of vegetables

  3. Add lemon juice and olive oil, stir adjust to taste

  4. Season with salt and pepper, to taste
