Italian Chicken Roll-Ups

  • 8 boneless, skinless chicken breast halves (2 lbs.)
  • 8 thin slices deli ham
  • ⅔ cup seasoned bread crumbs
  • 4 slices provolone cheese, halved
  • 1/2 cup grated Romano or Parmesan cheese
  • 1/4 cup minced fresh parsley
  • 1/2 cup milk


  1. Flatten chicken to ¼ in. thickness.

  2. Place a slice of ham and half slice of cheese on each piece of chicken.

  3. Roll up from a short side and tuck in ends; secure with toothpick.

  4. In a shallow bowl, combine crumbs, grated cheese and parsley.

  5. Pour milk into another bowl.

  6. Dip chicken rolls in milk, then in crumb mixture.

  7. Place roll-ups seam side down on a greased baking sheet.

  8. Spritz chicken with non-stick cooking spray.

  9. Bake uncovered @ 425 for 25 minutes or until juices run clear.

  10. Remove toothpicks and serve.
