Make in your sleep pot roast dinner

Throw in at 2:00, practically forget about it, eat at 6:00. To really please the family, put a dozen frozen rolls out in the morning to defrost and rise, pop in the oven right before dinner.

Cook time: 240 minutes
Serves 6 people

Ingredients

  • 2-3 Tbsp vegetable oil
  • 3 lb roast
  • Water
  • 1 envelope Lipton Onion soup mix
  • 4 large potatoes, cut in large chunks (peeled or not is up to you)
  • 1 lb bag baby carrots

Directions

  1. In large pot, brown roast on all sides in hot oil.

  2. Dump in soup mix and enough water to cover roast, place lid. Cook for 3 hours over medium-low heat. Check occasionally to make sure it’s at a low boil and not a vigorous boil so that it won’t be dry and tough.

  3. Dump in baby carrots, cook 30 mins.

  4. Dump in potatoes, cook additional 30 mins.

  5. Voila! Almost no work
