Garlic fries

Cook time: 50 minutes
Serves 6 people

Ingredients

  • 3 pounds potatoes, peeled and cut into 1/4 inch thick strips
  • 4 tsp vegetable oil
  • 3/4 tsp salt
  • cooking spray
  • 2 T butter
  • 8 cloves garlic, minced (about 5 tsp)
  • 2 T parsley, fresh and finely chopped
  • 2 T Parmesan cheese, freshly grated

Directions

  1. Preheat over to 400 degrees F.

  2. Combine potatoes, oil, and salt in large zip-top plastic bag, tossing to coat.

  3. Arrange potatoes in a single layer on a baking sheet coated with cooking spray.

  4. Bake at 400 for 20 minutes, then turn.

  5. Bake an additional 30 minutes or until potatoes are tender and golden brown.

  6. Add potatoes, parsley, and cheese to pan; toss to coat.

  7. Serve immediately.
