Balsamic Chicken Cutlets

Serves 4 people

Ingredients

  • 1 pound boneless, skinless chicken breast halves
  • 1 teaspoon olive oil
  • 2 Tablespoons balsamic vinegar
  • 1 Tablespoon light margarine
  • 2 Tablespoons chopped parsley

Directions

  1. In a non-stick skillet, saute chicken in olive oil until cooked, about 5 min. per side depending on thickness.

  2. Transfer to a serving platter.

  3. Add balsamic vinegar and margarine to the skillet. Stir until margarine is melted. Pour sauce over chicken and sprinkle with parsley.
