Salmon Loaf

Ingredients

  • Loaf:
  • 1 lb. cooked, flaked salmon
  • 3 eggs, separated
  • 3/4 c. milk
  • 1 c. soft bread crumbs
  • 1 c. shredded cheddar cheese
  • 1 t. minced onion
  • 1/2 t. salt
  • 2 T. lemon juice
  • Sauce:
  • 3 T. butter
  • 3 T. flour
  • 1 T. lemon juice
  • 1 1/2 c. milk
  • 3/4 t. salt
  • 1 1/2 T. parsley

Directions

  1. For the salmon loaf: mix salmon, egg yolks, and remaining ingredients.

  2. Beat egg whites until stiff and fold in.

  3. Put into a one quart dish.

  4. Bake at 350° for 30-35 min.

  5. For the sauce: melt butter and mix in flour.

  6. Stir in milk.

  7. Cook until thick, stirring constantly.

  8. Add lemon juice and parsley just before serving.
