Spaghetti Carbonara

I usually half this recipe when it’s just my family.

Cook time: 30 minutes
Serves 8 people

Ingredients

  • 1/2 cup olive oil
  • 2 cloves minced garlic
  • 1 onion, chopped
  • 8-12 slices bacon, thick
  • 4 eggs
  • 2 packages spaghetti
  • 2 cups Parmesan cheese, grated

Directions

  1. In a frying pan, combine 1/2 in. olive oil, 2 cloves minced garlic, onion and bacon cut into small squares.

  2. Let simmer for about half an hour, being careful not to let oil get to boiling point.

  3. In a bowl, beat eggs with lots of salt and fresh ground pepper.

  4. Bring a pan of salted water to a boil.

  5. Cook spaghetti until al dente, drain, return to pan, and immediately add egg mixture to pasta.

  6. Stir the egg mixture and pasta until well mixed and eggs have been thoroughly cooked.

  7. Add mixture from frying pan and stir.

  8. Finish with Parmesan cheese and serve.
