Sweet Potato Casserole

Ingredients

  • 5 or 6 large sweet potatoes
  • 1 stick butter
  • 1/2 c. brown sugar
  • 1/4 c. syrup
  • 1-2 t. salt
  • Marshmallows

Directions

  1. Peel and boil sweet potatoes.

  2. Drain as much water as possible.

  3. Reserve a little water to thin as necessary.

  4. Dot with butter and let melt.

  5. Add brown sugar, syrup, and salt and mix with mixer until creamy smooth (should be a little thinner than mashed white potatoes).

  6. Spread in a shallow baking dish (two inches deep or so).

  7. ke for 20 min. at 350.

  8. After 20 min. dot with marshmallows (approximately one per serving).

  9. Bake for an additional 10 – 15 min., until marshmallows are slightly browned and melted.
