Macintosh Apple Cider Scones

Ingredients

  • 1 cup grated apple, cored but not peeled, slightly packed
  • 2 1/2 cups all-purpose flour
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 cup unsalted butter
  • 1/2 cup apple cider or apple juice
  • Coating
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • thin slices of apple, unpeeled

Directions

  1. Preheat oven to 425 F.

  2. Line a doubled up baking sheet with parchment paper. Prepare apples (you will need about two) and set aside.

  3. In a food processor, place the flour, sugar, salt, baking powder, baking soda and cinnamon and process to blend.

  4. Add butter and pulse to break butter into dry ingredients until you have a coarse mixture. Turn out into a large bowl. Make a well in the center and stir in apple cider or juice, then fold in grated apples.

  5. Turn mixture out onto a lightly floured work surface or board. Knead gently to make a mass. Sprinkle board with sugar and cinnamon. Mix with fingers to distribute cinnamon. Toss scone dough on this and turn once or twice to coat. Pat into a thickness of 1 inch and cut into 2 1/2 inch circles or cut into 6 to 8 wedges. Garnish with a thin apple slice.

  6. Bake until lightly golden (14-18 minutes).
