Raisin apple and oat muffins

Ingredients

  • 1 cup dried currants
  • 1 apple, medium, peeled and chopped (about 1 cup)
  • 3/4 cup milk
  • 1/3 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 cup all-purpose flour
  • 1 cup quick-cooking oats
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 tsp allspice
  • 2 tbsp brown sugar or coarse raw sugar crystals

Directions

  1. Preheat oven to 400F. Line 12 muffin cups with paper baking cups.

  2. Combine currants, apple, milk, sugar, and oil in a medium mixing bowl.

  3. Stir together flour, oats, baking powder, cinnamon, nutmeg, salt, and allspice in a small bowl. Stir into raisin mixture until just combined.

  4. Spoon batter into prepared muffin cups. Sprinkle tops with 1/2 tsp brown sugar or sugar crystals.

  5. Bake 20 minutes or until golden-brown and toothpick inserted comes out clean.
