Pear Raisin Pie

Ingredients

  • 2/3 cup quick-cooking oats
  • 1/2 cup Original Bisquick
  • 1/3 cup packed brown sugar
  • 1/4 cup firm margarine or butter
  • 1 cup Original Bisquick
  • 1/4 cup margarine or butter, softened
  • 2 tablespoons boiling water
  • 1/2 cup pineapple juice
  • 1/2 cup raisins
  • 1 tablespoon cornstarch
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 3 medium pears, peeled and sliced (2 cups)

Directions

  1. Heat oven to 375 degrees.

  2. Mix oats, 1/2 cup Bisquick and brown sugar.

  3. Cut in firm margarine, using fork or pastry blender, until mixture is crumbly; set aside.

  4. Stir 1 cup Bisquick and softened margarine in medium bowl until blended.

  5. Add boiling water; stir vigorously until very soft dough forms.

  6. Press dough firmly in ungreased pie plate, 9 × 1/4 inches, bringing dough onto rim of pie plate.

  7. Flute edge if desired.

  8. Mix pineapple juice, raisins, cornstarch, nutmeg, and ginger in 2 quart saucepan.

  9. Cook over medium heat, stirring constantly, until mixture thickens and boils.

  10. Boil and stir 1 minute; remove from heat.

  11. Stir in pears.

  12. Spoon into pie plate.

  13. Sprinkle with topping.

  14. Bake 25 to 30 minutes or until crust and topping are light golden brown.
