Thermos Lunch

Simple and Quick

Serves 1 people

Ingredients

  • 1/4 cup yellow split mung beans
  • 1/4 cup rice
  • 1-1/2 cup frozen mixed vegetables
  • salt
  • pepper
  • cumin powder
  • coriander powder
  • ginger powder
  • turmeric
  • 1 tablespoon butter
  • 2 cups boiling water

Directions

  1. Put the water to boil in a teakettle while you briefly saute the spices in a large saucepan for a few seconds in the butter.

  2. Add the mung beans, rice and chopped vegetables.

  3. Cover with the boiling water, and boil for five minutes.

  4. While still boiling hot, quickly pour the mixture into a one-liter or one-quart thermos (you may need to spoon it in, but don’t let the mixture cool).

  5. Close the thermos quickly and leave it closed for about four hours.

  6. The meal will cook and be ready to eat after four hours in the thermos. Variations – are endless with many spice mixes and beans/legumes subsitutes.
