Emma’s Brown & Serve Rolls

Ingredients

  • 3 cups warm water
  • 2 tsp salt
  • 1 egg
  • 1/4 cup oil, or applesauce
  • 1/4 cup honey, or molasses
  • 2 Tbs dry yeast, *see note
  • 1 cup bean flour
  • 6 cups whole wheat flour

Directions

  1. In bowl, combine 2 cups warm water with oil or applesauce, egg, salt and 3 cups flour. Mix 5 minutes at high speed in electric mixer. Let rest while combining remaining water, yeast and honey.

  2. Allow both mixtures to rest 8-10 minutes while yeast rises double. Combine mixtures and knead at low speed, adding enough flour to make a smooth dough the starts to pull away from the sides. Knead an additional 2-3 minutes.

  3. Turn out onto an oiled surface and pound as you knead to develop the gluten which makes a high-rising, fluffy bread. divide dough into balls with an ice cream scoop and place in muffin tins or baking tray that have been coated with cooking spray. Cover and place on layers of toweling in a warm spot to rise double.

  4. Bake at 275 for 40 minutes. The rolls will not have browned. Remove from oven, allow to cool, remove from pans and place in freezer bags or wrap in plastic, and freeze.

  5. When ready to serve, bake on cookie sheet for 8-10 minutes at 400 degrees.

  6. *If using quick-rising yeast, reduce amount to 4-1/2 tsp.

  7. *If baking in a convection oven, reduce temperature to 200 degrees.
