Boozy Ginger Stuffed Baked French Toast

Ingredients

  • 1 loaf French bread
  • 5 eggs
  • 1.5-2 cups milk (i used goat milk because i digest it better)
  • 1/2 stick of butter
  • 2tbl spoons of sugar (brown if you have it)
  • 3 tbl spoons of maple syrup
  • 2 shots of dark rum
  • stuffing:
  • 1/2 cup of plain yogurt
  • 1tbl spoon dark rum
  • 1/2 cup of cream cheese
  • 2 tbl spoons of ginger preserves (or the preserves of your choice)
  • 1tbl spoon of maple syrup (if the yogurt was not sweetened)

Directions

  1. Slice the french bread into 1inch thick slices.

  2. Mix the stuffing ingredients, as you melt the butter.

  3. Then pour 1/2 of the butter into a 9×13 pan, ad then dip one side of the bread

  4. slices in the butter, and then lay them in the pan 1 deep, covering as much of the pan as possible.

  5. Then mix the eggs, rum butter syrup and sugar and whisk until fairly scrambled.

  6. Now spoon a large lump of stuffing on top of each slice of bread (feel free to kinda mush it into the slice), and then layer the top layer of bread over the top and then pour in the eggs and other ingredients soaking all the bread but not drowning it. Put a pat of butter on each slice and cover in foil.

  7. Refrigerate over night, then in the morning preheat the oven to 350, and uncover the pan and cook it for 30-45minutes until the toast on the top is golden.
