Almond Rice Pilaf

Ingredients

  • 2 tbsp unsalted butter
  • 1/2 medium onion - finely chopped (1/4 c)
  • 1/3 c slivered almonds
  • 1 c uncooked long grain white rice
  • 2c chicken broth
  • 1/4 tsp salt
  • Freshly ground black pepper
  • Chopped fresh parsley

Directions

  1. In a medium saucepan, melt the butter over medium-high heat. Stir in the onion and almonds. Cook 5-7 mins or until onion is softened and almonds are golden, stirring occasionally. Add the rice; cook and stir for 1 minute.

  2. Slowly stir in the broth; add salt and pepper to taste. Bring to a boil. Cover, reduce heat to low, and simmer 15-17 mins or until liquid is absorbed. Fluff with a fork and garnish with parsley.
