Apple, Ham and Cheese

Ingredients

  • 6 teaspoons margarine or butter
  • 2 Golden Delicious apples
  • 1/2 cup shredded Gruyere or Jarlberg cheese (4 ounces)
  • 4 ounces ham, sliced
  • 8 eggs
  • 1/2 cup water
  • 1/2 teaspoon salt

Directions

  1. In nonstick 10 inch skillet, melt 2 teaspoons margarine or butter over medium-high heat.

  2. Add apples, peeled, cored, and cut into 1/2 inch wedges; cook until golden and tender.

  3. Divide apples, 1/2 cup shredded cheese, and ham cut into thin strips, among omelets.

  4. Beat eggs with water and salt.

  5. For each omelet, melt 1 teaspoon margarine or butter in non stick 8 inch skillet over medium-high heat.

  6. Pour 1/2 cup of egg mixture into skillet; cook until set (about 1 minute), gently lifting edge.

  7. Spoon one-fourth of filling on half of omelet, fold over other half, slide onto plate.
