Bran Muffins

Ingredients

  • 2 eggs
  • 2 C buttermilk
  • 1 1/4 C white flour
  • 1 1/4 C whole wheat flour
  • 1 1/2 C sugar (can use 1/2 as much honey, or substitute sucanat)
  • 2 1/2 t soda
  • 1 t salt
  • 1/2 C oil (can substitute applesauce)
  • 3 1/2 C bran cereal

Directions

  1. In a large bowl, beat eggs, blend in buttermilk. Add flour, sugar, soda, and salt. Mix in oil and cereal. Refrigerate for a few hours. Bake at 375 degrees, or at 350 degrees if using honey.
