Tortilla Soup

Ingredients

  • 28 oz chicken broth
  • 14-oz can of Cajun style stewed tomatoes
  • 3 Tb fresh lemon juice
  • 3 cloves garlic
  • 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 ground red pepper
  • 1 1/2 c cooked chicken, cubed
  • 1 c frozen corn
  • 1 15-oz can black beans, drained
  • 2 Tb half and half
  • 1 green onion, thinly sliced
  • Tortilla chips
  • Shredded Mexican-blend cheddar cheese

Directions

  1. Bring broth, tomatoes, lemon juice, garlic, chili powder, cumin, and red pepper to a boil.

  2. Reduce heat and add chicken, corn, beans, half and half, and green onion.

  3. Simmer 20 minutes.

  4. Serve with chips, cheese, and more green onions.
