Easy Breezy Mexicale Ole

Ingredients

  • 1/2 lb. ground beef
  • 1 16 oz can chili beans or black beans
  • 1 8 oz jar salsa
  • 2 Tbs taco sauce
  • 2 tsp cumin
  • 2 tsp garlic powder
  • 2 cups baked unsalted tortilla chips
  • 1 cup low-fat sour cream
  • 1/2 cup sliced green onions (5 medium)
  • 1 medium tomato, chopped
  • 4 oz. low fat cheddar cheese
  • Shredded lettuce & taco sauce, if desired

Directions

  1. Pre-heat oven to 350 degrees. In a skillet, brown ground beef, and drain. Stir in beans, tomato sauce, taco sauce, cumin and garlic powder. Heat to a simmer, stirring occasionally.

  2. Place tortilla chips in un-greased cassarole. Top with chicken mixture. Spread with sour cream. Sprinkle with onions and tomato, then cover with cheese. Bake, uncovered 20-30 minutes or until hot and bubbly. Arrange additional tortilla chips around edge of cassarole if desired.
