Caramelized Onion and Supreme Crostini

Ingredients

  • 2 tablespoons unsalted butter
  • 2 pounds Spanish onions, thinly sliced (about 8 cups)
  • 2 tablespoons olive oil
  • 1 teaspoon chopped fresh thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 loaf French bread, sliced 1/4 inch thick (18 slices)
  • 8 ounces Supreme cheese, rind removed, cut into 18 thin slices

Directions

  1. Preheat oven to 350 degrees.

  2. Melt butter in large pan over medium heat; add onions.

  3. Cook, stirring frequently, 15 minutes until caramelized, adding 1 tablespoon water.

  4. Remove from heat; stir in salt and pepper.

  5. Mix together olive oil and thyme.

  6. Brush both sides of bread slices with oil mixture; place on baking sheet.

  7. Bake 10 to 12 minutes, turning once, until toasted.

  8. Remove from oven; leave oven on.

  9. Top each bread slice with 1 tablespoon onions and 1 slice Supreme cheese.

  10. Return to oven; bake 2 minutes, until cheese melts slightly.

  11. Serve warm.
