Mock Chicken Cordon Bleu

Chicken tenders work well with this. You can always use more cheese and ham (cover layer completely). Do not skip the step of grinding fresh breadcrumbs (1 loaf sourdough), this is what really makes the difference with this recipe! Also, if you like honey mustard, you can spread a thin layer of your favorite mustard on top of the ham layer for some extra zing.

Ingredients

  • 2 1/2 lbs chicken breasts
  • 3/4 lbs grated swiss cheese
  • 6 oz. danish ham
  • Fresh sour dough bread crumbs

Directions

  1. Butter 8 × 8 baking dish and sprinkle liberally with bread crumbs. Add one layer of chicken to cover the bottom of baking dish. Sprinkle half the cheese over the chicken, add the ham*, repeat layer of chesse and end with the second layer of chicken. (*Option: Spread a thin layer of honey-mustard on top of ham.) Sprinkle top liberally with with bread crumbs. Drizzle melted butter over the bread crumbs. Cover with foil and bake in a pre-heated 350 degree over for 45 minutes, uncover and bake an additional 15 minutes. Do not overcook and dry it out!
