Creamy Garlic Soup

  • 1/4 c butter
  • 1.5 cup chopped white onion
  • 1/2 c chopped garlic
  • 1/2 c flour
  • 7 c strong beef broth
  • 1/2 c sour cream
  • 1/2 t fresh nutmeg


  1. Saute butter, onion, garlic til soft. Stir in flour and cook 3 min stirring constantly.

  2. Add broth and wine, bring to boil, then simmer 20 min.

  3. Cool and puree in batches and return to pan.

  4. Stir in sour cream and nutmeg and reheat to eat.
