Italian Red Cabbage

Ingredients

  • 1 med red cabbage, cut and corded in thin slices
  • 1 red onion, cut up and sliced
  • 1 apple, sliced
  • 1 c apple juice
  • 2 to 3 T oil
  • 1/2 c apple cider vinegar

Directions

  1. Combine in large pan, bring to a boil and cook covered for 40 minutes on medium heat.

  2. Last 5 minutes, remove lid to reduce liquid to just moist.
