Granola Bars

Ingredients

  • 2 cups oats
  • 3/4 cup wheat germ
  • 3/4 cup pumpkin seeds
  • 1 cup peanuts or mixed nuts, crushed
  • 2/3 cup brown sugar
  • 1/2 cup honey
  • 60g butter
  • 2 tsp vanilla essence
  • 1/2 tsp salt
  • 230g dried fruit

Directions

  1. Preheat oven to 200C. Mix nuts, oats, wheat germ, and seeds in a baking dish lined with baking paper. Toast 10-12 minutes, stirring occasionally.

  2. Meanwhile, in a glass 9X13 baking dish, line with baking paper and butter it. Use enough baking paper that will allow you to fold over the entire tray.

  3. Mix brown sugar, honey, butter, vanilla essence, and salt in a saucepan. Bring to a simmer, stirring constantly.

  4. In a large bowl, mix together liquid in saucepan, toasted stuff, and the dried fruit. Mix very well, making sure to get the liquid ‘glue’ over everything.

  5. Spread granola mixture into lined baking pan with a wooden spoon. Fold baking paper over, and press granola mixture to set. Press REALLY hard to make it one big block, otherwise it will fall apart.

  6. Leave for 2-3 hours, or until the granola mixture has completely cooled.

  7. Turn the granola out onto a cutting board, and slice into servings (press, do not saw with knife). Wrap individual servings in clingwrap.
