Lobster-Pesto Salad

Ingredients

  • 2 cups uncooked medium shell macaroni
  • 2/3 cup pesto
  • 3 Italian pear-shaped tomatoes, cut into eighths
  • 1/2 cup small pitted ripe olives
  • 2 tablespoons white wine vinegar
  • 4 ounces spinach, coarsely chopped (about 3 cups)
  • 1 1/2 cups bite-size pieces cooked seafood Lobster

Directions

  1. Cook macaroni as directed on package; drain.

  2. Rinse in cold water; drain.

  3. Mix macaroni, pesto, tomatoes, olives, and vinegar in large bowl.

  4. Add spinach and seafood.

  5. Toss.
