Crab Quesadillas with Papaya Salsa

Ingredients

  • 1 1/2 cups chopped papaya or mango
  • 1 tablespoon thawed orange juice concentrate
  • 1 1/4 pound thawed snow crab legs
  • 8 (8 inch) flour tortillas
  • 1 1/2 cups shredded Dolfino Jalapeno Havarti cheese
  • 1/4 cup sliced green onions

Directions

  1. Spray grill rack with nonstick cooking spray.

  2. Preheat grill to medium

  3. In a small bowl stir together papaya or mango, and orange juice concentrate.

  4. Set aside.

  5. Use kitchen scissors or a mallet to crack crab shells.

  6. Remove meat and break into chunks.

  7. Discard cartilage.

  8. Place 4 flour tortillas on the grill rack.

  9. Quickly sprinkle with crabmeat, cheese, and green onions.

  10. Top with remaining tortillas, pressing down slightly on each.

  11. Grill for 5 to 7 minutes or until lightly toasted, turning once.

  12. Cut each into 6 wedges.

  13. Serve with papaya mixture.

  14. Note: Can substitute crab with 1 1/2 cups cooked, sliced chicken
