Cheddar Crisps

Ingredients

  • 3/4 c butter, softened
  • 4 1/2 c grated sharp yellow Cheddar
  • 3 egg yolks
  • 1 1/2 c flour
  • 1 1/2 t freshly cracked black pepper

Directions

  1. eheat oven to 350.

  2. In a standing mixer bowl with a paddle, combine the butter and cheese. Cream together on medium speed until fluffy.

  3. Add the egg yolks and mix until smooth and creamy.

  4. Whisk the flour, salt and pepper together in a small bowl and add to the mixing bowl at slowest speed.

  5. Mix just until the dough comes together in a ball.

  6. Chill the dough, covered, for 10 minutes

  7. Form 1" balls with a small scoop and place on a parchment lined sheet pan. Flatten slightly with a fork that’s been dipped in flour.

  8. Bake for 15 minutes at 350 until well browned and a little crispy on the edges. Cool on a rack for 10 minutes. Can be reheated once.
