Adele’s Chicken Broth

This is the chicken broth used in cauliflower soup.

  • dark meat chicken (leg quarters, backs)
  • 3 celery stalks
  • 3 onions peeled and quartered
  • 3 garlic cloves large (or 6 small), peeled
  • 3 carrots peeled
  • 1/2 tsp whole black peppercorns
  • 1 T salt


  1. In an 8-quart stock pot, simmer ingredients for one hour.

  2. Remove the meat and let broth cool.
