Chocolate Zucchini Cake

Ingredients

  • 1/2 cup margarine
  • 1/2 cup salad oil
  • 1 3/4 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup sour milk (I use 1 tablespoon vinegar to sour the milk)
  • 4 tablespoons cocoa
  • 2 1/2 cups flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 2 cups grated zucchini
  • 1/2 cup brown sugar
  • 1 cup chocolate chips
  • 1/2 - 1 cup chopped nuts (optional)

Directions

  1. Cream margarine, oil, and sugar.

  2. Add eggs, vanilla, sour milk, and cocoa.

  3. Mix well.

  4. Sift and add flour, baking powder, soda, and salt.

  5. Stir in zucchini.

  6. Spread in a greased and floured 9 by 13 inch pan.

  7. Sprinkle with brown sugar, chocolate chips, and chopped nuts.

  8. Bake at 325 degrees for 40 to 45 minutes.
