Zucchini Tomato Pie

Ingredients

  • 2 c. zucchini, chopped
  • 1 c. fresh tomato, chopped
  • 1/2 c. onion, chopped
  • 1/2 c. parmesan cheese
  • 1 1/2 c. milk
  • 3/4 c. bisquick
  • 3 eggs
  • 1/2 tsp. salt
  • 1/4 Tbsp. pepper

Directions

  1. eheat over to 400.

  2. Grease a 10-inch quiche dish or pie pan.

  3. Sprinkle zucchini, tomato, onion, and cheese into plate.

  4. Beat remaining ingredients until smooth.

  5. Pour into plate.

  6. Bake until knife inserted in center comes out clean—about 30 minutes.

  7. Cool 5 minutes before cutting and serving.
