Grilled Pineapple Sorbet

Ingredients

  • 1 fresh pineapple, peeled, cored, cut into 1/2" slices
  • 1/2 c. brown sugar
  • 2 Tbsp. lemon or lime juice
  • 1/4 tsp. cinnamon
  • 3 c. orange (or other flavor) sherbet

Directions

  1. Combine brown sugar, juices, and cinnamon in a small bowl until smooth.

  2. Spread on each side of pineapple.

  3. Grill pineapple 4-5" from medium coals for 5-10 minutes (or on medium heat on George Foreman grill), gurning once, until sugar mixture melts and pineapple is heated and tender. Don’t overcook.

  4. Top each slice with a small scoop of sherbet and serve immediately.
