Crumpets (Cream-Filled Cookies)

Ingredients

  • 6 Tbsp. chilled butter or margarine
  • 1 c. flour
  • 2 1/2 Tbsp. cream
  • 3/4 c. powdered sugar
  • 1 Tbsp. soft butter
  • 1/8 tsp. almond extract
  • 1 Tbsp. cream
  • food coloring as desired

Directions

  1. Cut butter into flour. Sprinkle with cream and mix until just moistened.

  2. Roll out to about 1/8 inch thick and cut with 1 1/2-inch cutter.

  3. Dip one side in sugar and place on ungreased baking pan. With fork, prick each cookie in 4 parallel rows.

  4. Bake at 375 for about 8 minutes. Sandwich with icing.

  5. To make icing, thoroughly combine powdered sugar, soft buter, almond extract, cream, and food coloring.

  6. Cookies are fragile—frost carefully.
