Honey Orange Roast Chicken

Serves 4 people

Ingredients

  • 1/2 cup orange juice
  • 1/2 cup honey
  • 1 tablespoon ground cumin
  • Salt and Freshly ground black pepper
  • 3 lb chicken, giblets and excess fat removed

Directions

  1. Preheat over to 400 degrees.

  2. Combine orange juice, honey, cumin, salt, and pepper in blender or bowl and blend or whisk until smooth.

  3. Place chicken in roasting pan and spoon all but 1/4 cup of liquid over it, making sure to get liquid on the legs and thighs.

  4. Place chicken in the oven, legs first. Roast 10 minutes, then spoon the juices from the bottom of the pan back over the chicken. Reverse pan from back to front and return to oven. Repeat 40 times, basting every 10 minutes and switching pan position.

  5. After roasting for 50 minutes, insert an instant-read thermometer into the chicken thigh. If it reads 155-165 degrees, remove from oven and baste one final time. Let sit 5 minutes before carving and serving.
