Japanese Curry

Ingredients

  • 1 pkg. Golden Curry sauce mix (medium hot)
  • 2 Tbsp. oil
  • 2 chicken breasts, cubed
  • 2 potatoes, peeled and diced
  • 1 c. carrots, diced
  • 1/2 c. onion, diced (more or less to taste)
  • 1 c. green pepper, diced
  • 1/2 c. apple, diced
  • 1/2 c. pineapple, diced
  • 2 1/2 c. water

Directions

  1. Brown cubed chicken in oil in bottom of stock pot until cooked through. Add onions and sauté.

  2. Add 2 1/2 c. water along with the rest of the produce. Bring to a boil and simmer until vegetables are tender (about 10 minutes).

  3. Add curry mix. Stir well to combine. Allow to simmer until desired consistency is reached.

  4. Serve over hot rice.
