Crispy corn tacos

Excellent use for leftover pulled pork. Good enough to make pulled pork in order to have.

Serves 4 people

Ingredients

  • Corn tortillas
  • Cooked shredded (pulled) pork
  • Taco Seasoning
  • Oil

Directions

  1. Heat pulled pork with some water and Taco seasoning to taste.

  2. Heat cast iron skillet with some oil.

  3. Place a tortilla on skillet, add a spoonful or so of meat, and cook 30 seconds or so. Fold the tortilla over, and then flip it to cook both sides. Cook until tortilla is crispy. Cook on a cooking rack to keep crispiness.

  4. Good hot or cold — keep ends of tortilla open while cooking if you plan to add taco fixings (lettuce, cheese, tomatoes, onions, sour cream, etc.) later.
