Zucchini Bread

Ingredients

  • 3 eggs
  • 3/4 cup vegetable oil
  • 1 2/3 cups packed brown sugar
  • 2 cups grated zucchini
  • 3 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup chopped walnuts and/or 1/2 cup raisins

Directions

  1. In a large bowl, beat eggs well. Add oil, vanilla, and brown sugar. Stir well, breaking up lumps of brown sugar so you have a syrup. Add zucchini; stir well. Blend in flour, cinnamon, baking powder, soda, and salt. Stir in walnuts/raisins. Pour batter into a greased 9 × 5 inch loaf pan.

  2. Bake at 325 degrees F for 1 hour. Test with a knife, because 1 hour might not be enough (I had to cook it an extra 15 minutes). Cool.
