Dutch Apple Tea Cake

Ingredients

  • 1/2 c firmly packed brown sugar
  • 1 c granulated sugar
  • 1/2 c soft shortening
  • 2 eggs
  • 2 tsp grated orange rind
  • 2 c sifted all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 tsp salt
  • 1 c undiluted evaporated milk
  • 2 c finely chopped pared apples
  • 1/2 c chopped pecans
  • 2 tbsp granulated sugar
  • *1/2 c firmly packed brown sugar
  • *1/2 c granulated sugar
  • *2 tbsp flour
  • *1 c water
  • *1/4 c butter
  • *1 tsp vanilla

Directions

  1. Mix together brown sugar, granulated sugar, shortening, eggs and orange rind in a large bowl until smooth and creamy.

  2. Soft together flour, baking powder, baking soda, cinnamon and salt.

  3. Alternately add flour mixture and evaporated milk to the sugar mixture, ending with dry ingredients.

  4. Stir in apples.

  5. Turn into greased baking dish (9×13), top with pecans and sprinkle with 2 tbsp granulated sugar. Bake at 350F for 30-40 minutes.

  6. Or turn into cupcake pans, top with pecans and sugar, and bake at 350F for 25 minutes.

  7. For sauce: cook brown sugar, granulated suar, flour and water together until clear. Add butter and continue cooking until butter melts. Remove from heat and stir in vanilla.
