Peach Almond Cake

Ingredients

  • 1 1/2 c unsifted flour
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1/2 c butter
  • 1 tbsp water
  • 1 egg yolk
  • 1/4 c peach jam
  • 2 eggs, 1 egg white
  • 1/2 c chopped almonds
  • 1/3 c oil
  • 1 1/4 tsp almond extract
  • 3/4 c sugar
  • 1/2 c peach jam
  • 1/8 tsp cream of tartar
  • 1/2 c milk
  • 1/2 tsp salt
  • 1 1/4 c flour
  • 1 1/2 tsp baking powder

Directions

  1. Mix flour, sugar and salt. Cut butter into mixture finely. Stir in water and egg yolk.

  2. Work dough until smooth. Press dough on bottom and sides of 9" round pan. Brush with jam.

  3. In small bowl, beat eggs and cream of tartar until stiff. Mix (on low) almonds, milk, oil, baking powder, 3 egg yolks, flour, sugar, and salt. Fold in egg whites.

  4. Bake at 350F 45 minutes. Cool, remove from pan.

  5. Top with 1/4 c peach jam and sliced, canned peaches.
