Eclair Cake

must be made the night before

Ingredients

  • 1 box of graham crackers
  • 2 boxes of instant pudding, either vanilla or cheesecake flavor
  • 3 1/2 cups milk
  • 1 tsp vanilla
  • 1 small tub Cool Whip
  • 1 1/2 cup powdered sugar
  • 1/2 cup cocoa
  • 3 Tbl soft butter
  • 3 Tbl milk
  • 2 tsp corn syrup
  • 2 tsp vanilla

Directions

  1. lightly grease 9X13 pan. Line bottom of pan with whole graham crackers. Mix the pudding, milk, and 1 tsp vanilla together and beat for 2 minutes. Fold in Cool Whip. Pour half over crackers. Top with another layer of crackers. Top with another layer of crackers. Pour rest of pudding mixture on top. Add another layer of crackers. In a small bowl, sift the sugar and cocoa together. Add soft butter and milk & mix well. Add corn syrup & vanilla. Mix until smooth. Spread evenly over top. Refrigerate 24 hours.
