Hollandaise Vegetable Ramen

Ingredients

  • 1 package chicken ramen noodles
  • 2 egg yolks
  • 3 tablespoons lemon juice
  • 1/2 cup margarine, firm
  • mixed vegetables (frozen, canned, or fresh)

Directions

  1. Cook noodles and drain.

  2. Brown chicken; season with 1/4 seasoning packet.

  3. In small saucepan, stir egg yolks and lemon juice briskly with spoon.

  4. Add 1/2 the margarine, stir over low heat until margarine melts.

  5. Add remaining margarine, stirring briskly until margarine melts and sauce thickens.

  6. Cook vegetables and drain.

  7. Top noodles with vegetables and sauce.
