5 Super-food Pesto

Ingredients

  • 1 Bunch of Basil
  • 2 Cloves Garlic
  • 1 Package of Tofu (soft)
  • 2 Hand-fulls Walnuts
  • 1 Tbs Nutritional Yeast
  • 1 Tbs Ground Flax Seed
  • 1 Bunch of Leafy greens (Parsley, Arugula, Spinach, etc)
  • 1 Package of Whole Grain Pasta
  • 2 Sweet Potatoes

Directions

  1. Blend first 7 ingredients in Food Processor

  2. Cook Pasta

  3. Cook Sweet Potatoes in Microwave (about 5 minutes)

  4. Dice up Sweet Potatoes and put over the Pasta/Pesto
