TASTY LEMON CHICKEN SOUP

(acually I found my cans contained more oz’s, so I added about 1/4 cup more rice)

Ingredients

  • 1 (46 oz) CAN CHICKEN BROTH (REDUCED SODIUM, IF POSSIBLE)
  • 1 (10 3/4 OZ) CONDENSED LOW-FAT CREAM OF CHICKEN SOUP
  • 1 CUP UNCOOKED RICE
  • 2 CUPS (i HEAPED MY CUPS) DICED COOKED CHICKEN
  • 1/4 CUP FRESH LEMON JUICE (a small lemon didn't make 1/4 cup)
  • 1/4 tsp LEMON RIND

Directions

  1. In a 5 or 6 cup stew pot, combine chicken broth and cream of chicken soup, mixing until well-blended.

  2. Stir in remaining ingredients

  3. Bring misture to a boil, reduce heat

  4. Cover and simmer for 15 to 20 minutes until rice is tender
