Baked Manicotti w/asparagus

Ingredients

  • 8 manicooti noodles
  • 8 oz asparagus spears
  • 8 very thin slices of swiss cheese
  • 8 thin slices of smoked turkey breast
  • 1 tbsp olive oil
  • 1/2 cup chopped onion
  • 2 tbsp of minced shallots
  • 1 tbsp all-purpose flour
  • 1 cup chicken broth
  • 2 tbsp dry sherry
  • 2 tbsp finely chopped parsley

Directions

  1. coat 7×10 baking dish with olive oil

  2. cook manicotti and drain

  3. arrange in a single layer on a plate

  4. cook asparagus and pat dry

  5. place a slice of ham on a slice of cheese

  6. place 2-3 pieces of asparagus, tip to end at side and roll up within the meat and cheese

  7. insert into manicotti and arrange in baking dish

  8. saute onions and shallots

  9. add flour and stir until blended.

  10. add chicken broth and sherry

  11. stir until it comes to a boil

  12. reduce heat and simmer while sauce thickens

  13. add parslet and simmer for 5 more min.

  14. pour sauce over manicotti

  15. cover and bake for 10 min or until bubbling and golden at 350
