Eggs Benedict on savory waffles

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoon baking powder
  • 2 tablespoons sugar
  • 2 eggs
  • 4 tablespoons unsalted butter, melted
  • 2 cups milk
  • 1 cup shredded Gruyere cheese
  • 1/2 cup potato, peeled, boiled, and mashed
  • 3 tablespoons chopped fresh chives
  • Freshly ground pepper to taste
  • 8 slices ham
  • 8 poached eggs
  • 1 cup hollandaise sauce
  • Chopped green onions for garnish

Directions

  1. Preheat a waffle maker according to manufacturer’s instructions.

  2. In a bowl, whisk together flour, salt, baking powder, and sugar.

  3. In another bowl, whisk together eggs, butter and milk.

  4. Add egg mixture to flour mixture; whisk until combined.

  5. Fold in cheese, potato, chives, and pepper.

  6. Cook waffles according to manufacturer’s instructions until brown and crisp.

  7. Place each waffle on a plate.

  8. Top with 1 slice ham, 1 poached egg, and 2 tablespoons hollandaise sauce.

  9. Garnish with green onions.
